This Chicken Parmesan Grilled Cheese Sandwich layers crispy chicken, zesty marinara, gooey melted cheese, and perfectly toasted bread into a cozy, satisfying meal. It’s big on flavor, light on guilt, and ideal for a quick lunch or an easy weeknight dinner.

Ingredients

 4 Slices, light whole-grained bread
½ cup Cooked, shredded chicken breast
 ½ cup shredded mozzarella cheese
 ¼ cup marinara sauce
 2 tbsp grated Parmesan cheese
 ½ tsp Italian Season
 1 tsp butter
Grilled Chicken parmesan

Directions

1

In a small bowl, mix the shredded chicken with marinara sauce, Italian seasoning, and Parmesan cheese.

2

Stir until the chicken is evenly coated and set aside.

3

Lay out the bread slices. Sprinkle 2 tablespoons of mozzarella cheese onto two of the slices.

4

Divide the chicken mixture evenly between the two sandwiches, spreading it over the cheese. Top the chicken with the remaining mozzarella cheese.

5

Place the other slices of bread on top to form the sandwiches.

6

Heat a non-stick skillet or griddle over medium heat and lightly spray with cooking spray or use a small amount of butter.

Place the sandwiches on the skillet and cook for 2-3 minutes per side, or until the bread is golden brown and crispy and the cheese is melted.

7

Remove the sandwiches from the skillet and let them rest for a minute before slicing in half. Serve hot, with an optional side of marinara sauce for dipping.
