Who says a grilled cheese sandwich is just for lunch or dinner? Awaken your tastebuds and enjoy a gold brown, buttery grilled cheese sandwich with fluffy scrambled eggs, smothered in maple syrup.
If you are looking for more protein, you can add ham, sausage or bacon!
In a medium bowl, beat eggs, milk, salt and pepper until blended.
Heat 1 t. butter in a large non-stick skillet over medium heat; pour in the egg mixture. As eggs begin to set, gently pull them across the pan with a spatula, forming large curds. Continue cooking while pulling and folding the eggs until thickened and no and visible liquid egg remains. Don't overcook. Remove eggs from the pan, set aside.
Clean the skillet; heat skillet to medium heat.
Completely butter one side of each slice of bread.
Place one slice of bread in the pan, buttered side down, place the cheese and eggs and top with the remaining slice of bread, buttered side up
Turn the heat down a notch and cook until golden brown, about 2-4 minutes.
Flip and cook until golden brown on the other side, about 2-4 minutes.
Serve with maple syrup.
